Healthy Eats

We're always trying new things in our house and the latest healthy lifestyle choice we've decided to try is a vegetarian dish 2 days per week. My first day wasn't that bad and as always I'm here to share my experiences and fill you all in.

For dinner, I made this healthy vegetarian chili. It wasn't half bad but in my opinion it takes some getting use to. I followed the recipe and added a few tweaks of my own.

Vegetarian Chilli -Taste of Home Original


YIELD:16 servings

Ingredients

  • 4 medium zucchini, chopped
  • 2 medium onions, chopped
  • 1 medium green pepper, chopped
  • 1 medium sweet red pepper, chopped
  • 1/4 cup olive oil
  • 4 garlic cloves, minced
  • 2 cans (28 ounces each) Italian stewed tomatoes, cut up
  • 1 can (15 ounces) tomato sauce
  • 1 can (15 ounces) pinto beans, rinsed and drained
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 jalapeno pepper, seeded and chopped
  • 1/4 cup each minced fresh cilantro and parsley
  • 2 tablespoons chili powder
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 teaspoon ground cumin

Directions

Saute the vegetebles together in olive oil (I prefer EVOO) and  added corn and a can of  RoTel Diced Tomatoes and Green Chilies. I also added garlic and onion powder.
