No Meat Monday

I haven't posted a recipe in a while so it's beyond due and I made a delicious fish dish that I just had to share. I have made the decision to have 2 days out of the week where I eliminate red meat so this worked out perfectly for dinner and it was great! I advise making enough for 2 days so that you can really take advantage of the recipe because I guarantee you'll love it! It's definitely restaurant quality in the comfort of you own home so if you enjoy a good Netflix and chill night then you'll definitely appreciate this recipe. I promise it's worth it!

Now that I've teased you for a while here is the recipe for one outstanding meal including sides.
My entire dish suggestion is Cilantro and lime fish with rice pilaf and asparagus drizzled with the cilantro lime sauce.  You can also use this same recipe to make a great fish taco and use the sauce to moisten up your taco dish.







Cilantro lime Fish
1. season your fish (I used tilapia but any fish you choose is fine like salmon or cod). I love to use Old Bay seasoning to prep with a bit of salt, pepper, onion powder, and garlic powder. In addition 1 fresh squeezed lime juice (must be fresh squeezed) and red pepper flakes if you like it hot.
2.  add your fish to the oven cover for 30 minutes on 325 degrees.
3.  Use a food processor to cut up 1/2 red onion and the cilantro or finely chop.
4.  Use a skillet and heat up 1 teaspoon of butter then add your onions and cilantro. After the onions have softened, add a 342 cup of chicken broth and squeeze another whole lime and add that juice.  Let simmer for 5 minutes remove from fire and then add 1/2 cup of light cream. Set aside your sauce.
5. After you have fully cooked your fish add the sauce and serve over your fish.

For my rice pilaf I used a simple bag of Carolina rice pilaf. It's simple and really easy to make. It compliments the fish very well.


For the asparagus, in the same pan that you prepared your marinade, add 2 teaspoons of olive oil and a scoop of garlic and add your bunch of asparagus. Season with salt and pepper and cook for 10 minutes making sure to turn them throughout.

When all are fully prepared, add your asparagus to the plate and drizzle with your cilantro marinade, add a scoop of rice and top with your fish. Don't forget to drizzle some of the sauce on your fish and rice too and now you have the perfect meal. With the prep and the cooking it all takes a little under an hour.
